Vegan keto stir fry

Keto doesn’t have to be meat! Here’s a delicious, completely vegan and keto friendly dish you can prepare quickly and easily. It’s easy to modify this recipe — see the optional ingredients list below.

Vegan Keto Stir Fry Recipe

Easy to prepare, serves 4. Vegan, keto friendly.

Ingredients

  • 1 package of firm tofu
  • 3/4 cup peanut oil
  • 1 tablespoon sesame oil
  • 1 tablespoon soy sauce
  • 1 bag frozen stir fry vegetables
  • 4 cups or more of cauliflower rice

Optional Ingredients

I kept the basic recipe simple, so you can mix and match other ingredients. I keep cans of these items in the pantry, and it’s simply a matter of opening an can, draining the liquid out, and then dumping the contents into the wok. Add any or all of the following:

  • Water chestnuts
  • Baby corn
  • Bamboo shoots
  • Bean sprouts
  • Shiitake mushrooms
  • Sesame seeds

You may also substitute a tablespoon of Bragg’s Liquid Aminos to reduce the sugars even more, and increase the protein a little bit.

These optional ingredients will increase the amount of fiber and carbohydrates in each serving. If you add three or more cans of these tasty additions, you may want to increase the amount of oil and tofu you use, to keep the ratios of fat, protein, carbs (and flavor) similar to the basic version. This is a forgiving recipe, so don’t be afraid to experiment!

Directions

  1. Slice the block of tofu into tiny cubes. 
  2. Heat the peanut oil in the wok on high. Flick some drops of water into the oil to test the temperature; they will crackle and steam off when the oil is up to temperature.
  3. Put the tofu in the wok, stir to coat with the oil.
  4. Stir the tofu every 3-5 minutes so all of the sides are submerged in oil. The tofu is ready when all sides are golden brown. This may take up to 20 minutes.
  5. Stir in the frozen stir fry vegetables. Note that the tofu won’t crisp up after you add the veggies, so wait until the tofu is crisp and golden.
  6. Once the veggies have thawed, stir in any of the optional ingredients you like. 
  7. As the sauce thickens and boils, add the sesame oil. 
  8. Serve 1.5 cups of stir fry over 1 cup of cauliflower rice. If you make the cauliflower rice ahead of time, you can heat it up in the microwave or saute it in some peanut oil.
